This Asian Stir Fry was a hit in my house, and we paired it with some Trader Joes chicken gyoza potstickers for a more filling meal!

Ingredients:

  • Pack of chicken breasts

  • shredded carrots

  • white onion

  • broccoli

  • mushrooms

  • could also add bok choy, peppers, squash, etc.

  • minced garlic

  • coconut aminos (or soy sauce)

Directions:

  1. Cut chicken into bite-sized pieces and cook in the pan with avocado oil

  2. While the chicken is cooking, chop all of your vegetables

  3. Once chicken is cooked all thew way through, throw vegetables into the pan with some minced garlic and a tiny bit more oil

  4. Let the vegetables cook through and then add in a generous amount of coconut aminos; let simmer for 5-10 minutes or until vegetables are soft

  5. Add more seasonings and sauce to taste!

Cook in a BIG pan!
