Chicken Pesto Bake

A flavorful meal that simplifies your weekly cooking!

This Chicken Pesto Bake is a convenient and well-balanced dinner option for those busy days!

Happened to pick up a bag of broccoli, package of cherry tomatoes, pesto, and chicken tenders on my recent Trader Joes trip, and this made for the easiest weeknight dinner!

Ingredients:

  • 1 bag of broccoli

  • 1 package of flavor bomb cherry tomatoes

  • 1 lb boneless skinless chicken tenders

  • 2/3 cup pesto [I used TJoes Vegan Kale Pesto]

  • Garlic powder, onion powder, salt, pepper

  • Parmesan cheese

Directions:

  1. Preheat oven to 400F

  2. Spray bottom of baking dish with avocado oil spray

  3. Cut chicken tenders into bite-sized pieces

  4. Place broccoli, tomatoes, chicken, pesto, and seasonings into the dish and mix so that it is all evenly distributed.

  5. Place the dish in oven for 25 minutes.

  6. At the 25 minute mark, pull the dish out of the oven and top with freshly grated parmesan. Place back in the oven for an additional 5 minutes.

  7. Serve with pasta, sweet potatoes, orzo, or fresh bread!

*This makes about 4 servings!
