When the weather starts to get the slightest bit cool, I enter into my soup era! Nothing better than a warm bowl of turkey chili on a cold night. This recipe is packed with protein, fiber, and so much flavor.

Ingredients:

  • 2 Tbsp olive oil

  • 2 medium yellow onion, diced

  • 3-4 Tbsp fresh minced garlic

  • 2 lb lean ground turkey

  • 4 Tbsp chili powder

  • 2 tsp ground cumin

  • 1 tsp dried oregano

  • 1/4 tsp cayenne pepper

  • 1/2 tsp salt

  • 2 cans diced tomato

  • 2 Tbsp tomato paste

  • 3 cups chicken broth

  • 2 cans dark red kidney beans, rinsed and drained

  • 1 can pinto or black beans

Directions:

  1. Spray bottom of pan with nonstick spray and saute onion, garlic, and olive oil in a large pan before adding into the crockpot.

  2. Saute the ground turkey in the pan and then add in the seasonings once fully cooked.

  3. Add ground meat, diced tomatoes, tomato paste, chicken broth, and canned beans into the crockpot.

  4. Let sit on low heat for 6-8 hours, adding more seasonings as needed!
