Protein Pasta Salad

You are going to want to add this high-protein pasta salad to your weekly lunch rotation! Simple ingredients and minimal prep!

Ingredients:

  • 1 box of chickpea pasta

  • 1 shredded rotisserie chicken

  • pre-cooked edamame

  • mozzarella pearls

  • flavor bomb cherry tomatoes

  • fresh basil, chiffonade

For the dressing:

  • 1/4 cup balsamic vinegar

  • 1/4 cup Extra Virgin Olive Oil

  • 1-2 Tbsp dijon mustard

  • 1-2 Tbsp honey

  • salt and pepper
