Brown bananas sitting on the counter? Only one right thing to do… whip up a batch of chocolate chip or blueberry banana muffins!

These make for the perfect breakfast or snack option!

Ingredients:

  • 3 ripe bananas [the browner the better]

  • 3 large eggs

  • 1/4 cup melted coconut oil

  • 2 cups almond or oat flour

  • 1/4 cup maple syrup

  • 2 Tbsp coconut sugar

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp cinnamon

Mix wet ingredients, add in dry ingredients, and place in muffin pan at 350 F for 15 minutes!
