Peanut Butter Energy Balls

These PB energy balls have been a staple in my house since middle school! These energy balls are naturally sweetened with honey, and packed with a balance of healthy carbohydrates, fats, protein, and fiber, making them a satisfying and nutritious snack throughout the day.

Oats and flaxseeds — naturally high in fiber, supporting digestion, promoting fullness, and helping maintain steady blood sugar levels.

Flaxseed is also one of the best plant sources of omega-3 fatty acids.

Peanut butter — excellent source of unsaturated fats, helping you stay full and satisfied.

Ingredients:

  • 2 cups rolled oats

  • 1 jar smooth peanut butter [just peanuts / peanuts + salt]

  • ½ cup ground flaxseed

  • 2/3 cup honey

  • optional: ½ cup Ezekiel brand golden flax cereal [for added crunch]

  • ½ bag mini chocolate chips

  • 2 tsp vanilla extract

  • cinnamon

  • sea salt

Directions:

  1. Mix all ingredients together in a bowl, form into balls, and freeze for 30 minutes.

    1. If consistency is too dry — add more peanut butter or honey.

    2. If the consistency is too peanut buttery — add more oats.

  2. After removing from the freezer, store in an air tight container in the fridge.
