It’s scary to think how much money I have spent on Purely Elizabeth granola over the years… While I continue to buy it whenever I go to the store, making homemade granola is so easy and can save you some $$!
I like to think this recipe is a copycat of Purely Elizabeths tried and true chocolate chip granola. Such an easy prep at the beginning of the week to throw into yogurt bowls, on top of smoothies, or even just eat on its own!
Ingredients:
3 cups rolled oats
1/4 cup oat flour
1 Tbsp chia seeds
cinnamon
sea salt
1/4 tsp baking soda
3 Tbsp almond, peanut, or cashew butter
1/3 cup melted coconut oil
1/3 cup coconut sugar
2 Tbsp maple syrup or honey
1/2 tsp vanilla extract
chocolate chips
Directions:
Mix dry ingredients together in one bowl
Mix wet ingredients together in another bowl
Combine the two mixtures and lay out onto a baking sheet lined with parchment paper, ensuring the mixture is close together and flattened out in order to create clusters/chunks.
Bake at 300 F for 20 minutes; After the 20 minutes is up, rotate the pan 180 degrees and bake for an additional 10-15 minutes.
Once you remove granola from the oven, top with chocolate chips immediately and let it cool completely on the baking sheet before breaking apart.
*Make sure to watch granola closely after rotating the pan to ensure it does not burn!
